I really like filming these little what i eat videos- I’m really into seeing what other people eat and feed their kids at the moment, it’s good to get a bit of food inspiration! I hope you don’t mind seeing two so close together!
Anyway, this week has been a little bit harder in our house as Roo has a really bad cold, so I feel almost as though I’ve disappeared off social media haha
Hopefully things will be backto normal soon and i can get another video up that’s a little bit more interesting haha

oh, by the way- the muffins I made for the kids are SO good, though some of you might like the recipe, they’re dairy free too!
ABC Muffins (dairy + egg free)
• 175g plain flour
• 1 tsp baking powder
• ½ tsp ground cinnamon
• ¼ tsp bicarbonate of soda
• 1 medium banana
• 100g light brown soft sugar
• 65ml coconut oil
• 135g carrots, coarsely grated
• 1 medium apple, peeled, cored and coarsely grated
0. Preheat the oven to 180°C/gas mark 4.
0. Arrange 30 paper mini muffin cases on a large baking sheet.
0. Sift the flour, baking powder, cinnamon and bicarbonate of soda into a medium bowl and stir to combine. Set aside.
0. In a separate, larger bowl, whisk together the banana and brown sugar until fluffy. Stir in the coconut oil and grated carrots and apple.
0. Add the dry ingredients to the wet ingredients, stirring until just blended.
0. The mixture will probably be a little dry so loosen with oat milk.
0. Pour the muffin mixture into the prepared cases and bake for 15 minutes until cooked through, or the tops of the muffins spring back when you touch them.
0. Remove from the oven and leave to cool slightly on the baking sheet for 10 minutes. Transfer to a wire rack to cool completely.
